The grouper is a fish with a large wingspan and robust body, with a large mouth and prominent lips. Its area of distribution includes the Canary Islands, where it can be found in abundance. Its meat is highly valued for its exquisite flavor, to the point that the famous saying “from the sea the grouper and from the land the lamb” has been attributed to it.
In adults, their coloration is characterized by being mostly brown with spots of various colors (white, yellow, green and silver-gray), while the belly is a golden-yellowish tone. In its juvenile stage, its color is greenish-blue.
In terms of size, groupers can grow up to one meter in length and weigh more than 100 kilograms. They are one of the largest fish found in coral reefs.
